Recipes and Koigu Sale

As far as the recipes go, lets start with desert, the soup is still being made!

Here is a note from Laura to go with it:

I received this recipe more than 25 years ago from my husband's best friend's mother, who shared it with me because she knew how much my husband loved this cake.  Nancy had received it when she was a young bride, and had no idea who "Audrey" was. Maybe someone does somewhere, but Audrey lives on in her apple cake recipe.

Audrey's Apple Cake

2 eggs
2 c. sugar
2 tsp. backing soda
pinch of salt
1/2 c. oil
2 tsp. cinnamon
1 tsp. vanilla
2 c. flour
4 c. dried or 2 c. fresh chopped apples
1 c. nutmeats (optional)or 1/2 c. nutmeats and 1/2 c. raisins


Cream eggs and sugar.  Add remaining ingredients.  Pour into greased 9 x 13 pan.  Bake at 350 degrees for 45 minutes.
If desired, frost with cream cheese frosting after the cake has cooled.

Cream Cheese Frosting

1 1/2 c. powdered (confectioner's) sugar
6 oz. softened cream cheese
3 TB butter, softened
pinch of salt
1/2 tsp. vanilla

Beat ingredients together and spread on cooled cake.  Additional nuts may be sprinkled over frosting.
